Preparation Steps
  1. In a medium mixing bowl, cream together unsalted butter, oil, light brown sugar, and honey using an electric mixer on medium speed for 1 minute.
  2. Add the egg and vanilla extract, mixing gently on low speed until just combined.
  3. Gradually sift in flour, baking soda, salt, and cinnamon, mixing on low speed until no dry streaks remain.
  4. Cover the bowl with plastic wrap and refrigerate the dough for about 1.5 hours.
  5. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  6. Use a cookie scoop to portion out the dough and roll each portion into a smooth ball, spacing them 2 inches apart on the sheet.
  7. Bake the cookies for 10 minutes, watching for the edges to set but the center to remain underbaked.
  8. Sprinkle fleur de sel over each warm cookie immediately after removing them from the oven.
  9. Allow cookies to rest for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
