- Start by cutting a ripe honeydew melon into cubes, removing the seeds and skin. In a blender, combine the honeydew pieces with the zest and freshly squeezed juice of one lime, along with a handful of fresh mint leaves. Blend on medium-high for about 2 minutes until the mixture is smooth and frothy.
- Once the mixture is blended to a frothy perfection, it's time to strain it. Using a fine mesh sieve or a nut milk bag, pour the blended mixture into a bowl to separate the liquid from the pulp. Gently press down with a spatula to extract all the flavorful juice.
- Transfer the strained juice into a clean jar or container, sealing it well. Place it in the refrigerator for at least 30 minutes to chill; this step enhances the flavors.
- To serve, fill a glass with ice and pour in the chilled honeydew concentrate, typically about half to two-thirds of the glass. Top it off with sparkling water or club soda, stirring gently to blend the flavors.
