Method
 

Step-by-Step Instructions
  1. In a large pitcher, combine pear juice, puréed pear, and maple syrup. Add vanilla bean, ginger slice, thyme sprig, and cinnamon stick. Stir gently and refrigerate for 30 minutes to 2 hours.
  2. Prepare serving glasses by rubbing a lemon wedge around the rims, then dip them into cinnamon sugar mixture. Fill glasses with large ice cubes.
  3. Retrieve the infusion from the refrigerator. Pour in chilled sparkling water, starting with about 1 cup. Gently stir to combine.
  4. Serve the mocktail over the ice in each glass. Garnish with a vanilla bean pod, pear slices, thyme sprigs, and optionally, star anise.

Notes
