- In a large pitcher, combine pear juice, puréed pear, and maple syrup. Add vanilla bean, ginger slice, thyme sprig, and cinnamon stick. Stir gently and refrigerate for 30 minutes to 2 hours.
- Prepare serving glasses by rubbing a lemon wedge around the rims, then dip them into cinnamon sugar mixture. Fill glasses with large ice cubes.
- Retrieve the infusion from the refrigerator. Pour in chilled sparkling water, starting with about 1 cup. Gently stir to combine.
- Serve the mocktail over the ice in each glass. Garnish with a vanilla bean pod, pear slices, thyme sprigs, and optionally, star anise.
