- Hull and dice 2 cups of fresh strawberries. In a medium saucepan, combine strawberries, 1 cup of cane sugar, and 1 cup of filtered water. Heat over medium-high and stir gently until the sugar dissolves, about 5 minutes.
- Once the sugar is dissolved, reduce heat to low and let the mixture simmer for 15 minutes, stirring occasionally.
- Remove from heat, let cool for a few minutes, then stir in the juice of one lemon.
- Strain the mixture through a fine-mesh strainer into a bowl or jar, pressing down to extract as much syrup as possible. Discard the solids.
- Fill a glass with ice, pour in about 2 tablespoons of the syrup, and top with 1 cup of chilled sparkling water. Stir gently to combine.
