  • 8 oz fettuccini pasta gluten-free pasta as alternative
For the Sauce
  • 2 tbsp butter or olive oil for a lighter version
  • 8 oz mushrooms, sliced any variety can be used
  • 1 medium shallot, chopped can substitute with yellow onion
  • cup chicken broth substitute with vegetable broth for vegetarian
  • ½ cup sour cream Greek yogurt as a substitute
  • 1 tbsp cornstarch optional for thickening
  • 1 cup roasted red bell peppers, diced optional
  • 2 tbsp capers optional

Method
 

Step-by-Step Instructions
  1. Marinate the shrimp by tossing it in olive oil and Cajun seasoning; let sit for at least 15 minutes.
  2. Cook fettuccini in a large pot of boiling salted water for 8-10 minutes; drain and set aside.
  3. Sauté mushrooms and shallots in butter over medium heat for 5-7 minutes, then keep warm.
  4. In the same skillet, cook marinated shrimp for 2-3 minutes until pink, then set aside.
  5. Pour chicken broth into the skillet, scraping up brown bits, and reduce to about ¼ cup.
  6. Combine sour cream and cornstarch in a bowl, then add to the broth, cooking until thickened.
  7. Return shrimp and vegetables to the skillet; stir gently to combine, seasoning with salt and pepper.
  8. Serve the creamy shrimp mixture over fettuccini, garnishing with fresh herbs or extra seasoning.
