- Marinate the chicken with browning, Jamaican green seasoning, sea salt, smoked paprika, and Jamaican curry powder. Refrigerate for at least 3 hours or overnight.
- Heat olive oil in a skillet, dissolve brown sugar, and sear the marinated chicken until golden brown. Set aside.
- In the same skillet, add more oil and roast additional Jamaican curry powder until fragrant.
- Add garlic, ginger, scotch bonnet peppers, green onions, carrots, and bell pepper. Sauté until fragrant.
- Pour in coconut milk and chicken stock, bring it to a boil, then add the chicken back.
- Simmer with potatoes and thyme until the chicken is cooked through and the sauce thickens.
- Serve hot with rice, vegetables, or fried plantains.
