Cooking Steps
- Cook the fettuccine in salted water until just al dente, usually 8-10 minutes. Reserve ½ cup pasta water, then drain and toss with olive oil.
- Sauté minced garlic in olive oil for 1 minute, then add spinach and cook until wilted, about 2-3 minutes.
- Blend the garlic and spinach mixture with cream, Parmesan, salt, pepper, nutmeg, and lemon juice until smooth. Return to skillet on low heat.
- Blanch asparagus for 2 minutes, then add peas and cook for 1 additional minute. Drain and add to the spinach sauce.
- Combine the cooked fettuccine with the sauce and vegetables. Toss well and garnish with basil, pine nuts, and extra Parmesan if desired.
