  • 1 cup Green Peas fresh or frozen
  • 8 oz Green Asparagus cut into 2-inch pieces
For Garnish
  • 0.5 cup Fresh Basil or parsley substitute
  • 0.25 cup Pine Nuts or Slivered Almonds toasted for garnish

Method
 

Cooking Steps
  1. Cook the fettuccine in salted water until just al dente, usually 8-10 minutes. Reserve ½ cup pasta water, then drain and toss with olive oil.
  2. Sauté minced garlic in olive oil for 1 minute, then add spinach and cook until wilted, about 2-3 minutes.
  3. Blend the garlic and spinach mixture with cream, Parmesan, salt, pepper, nutmeg, and lemon juice until smooth. Return to skillet on low heat.
  4. Blanch asparagus for 2 minutes, then add peas and cook for 1 additional minute. Drain and add to the spinach sauce.
  5. Combine the cooked fettuccine with the sauce and vegetables. Toss well and garnish with basil, pine nuts, and extra Parmesan if desired.
