  • 1 yolk Egg Yolk Omit for a vegan option.

Method
 

Step-by-Step Instructions
  1. Prepare the Steak: Let the premium steaks sit at room temperature for about 30 minutes and season both sides with sea salt and black pepper.
  2. Roast the Garlic: Slice the garlic bulb in half, drizzle with olive oil, wrap in foil, and roast with the steaks.
  3. Preheat the BBQ: Set the BBQ to medium-high heat (around 400°F/200°C). Grill the seasoned steaks and ciabatta rolls cut side down.
  4. Grill the Steaks: Cook steaks for 3-4 minutes on each side for medium-rare, or 5-6 minutes for well done. Rest for 5 minutes.
  5. Caramelise the Onions: Sauté chopped red onions in olive oil or butter for 3-5 minutes, then add brown sugar and balsamic vinegar.
  6. Make the Aioli: Blend roasted garlic, egg yolk, and mustard until smooth, then emulsify with olive oil, chives, and lemon juice.
  7. Assemble the Sandwich: Spread aioli on ciabatta, add steak slices, caramelised onions, and rocket.
