Ingredients
  

For the Steak
  • 300 g High-quality steaks (New York Strip or Porterhouse) Choose for the best flavor and tenderness.
  • 1 tbsp Salt Kosher salt preferred.
  • 1 tbsp Freshly cracked black pepper
  • 1 tbsp Vegetable oil Canola or grapeseed recommended.
For the Creamy Peppercorn Sauce
  • 85 ml Brandy or cognac Substitute with non-alcoholic red wine if desired.
  • 185 ml Beef broth/stock Low sodium preferred.
  • 125 ml Heavy cream
  • 2-3 tsp Coarsely crushed black peppercorns Use canned green peppercorns for a milder alternative.

Method
 

Cooking Instructions
  1. Season your steaks generously with salt and pepper on both sides. Let sit for 30 minutes at room temperature.
  2. Heat a skillet over medium-high heat and add oil. Sear steaks for 2 minutes on each side for medium-rare.
  3. Remove steaks from skillet and let rest for 5-10 minutes covered with foil.
  4. In the same skillet, add brandy and simmer for 1 minute, scraping up browned bits.
  5. Add beef broth and simmer for 5 minutes until reduced by half.
  6. Lower heat and stir in cream and crushed peppercorns. Simmer for 1.5-2 minutes until thickened.
  7. Slice the steaks and plate, generously spooning sauce over. Garnish with extra peppercorns or herbs if desired.

Notes
