- Season your steaks generously with salt and pepper on both sides. Let sit for 30 minutes at room temperature.
- Heat a skillet over medium-high heat and add oil. Sear steaks for 2 minutes on each side for medium-rare.
- Remove steaks from skillet and let rest for 5-10 minutes covered with foil.
- In the same skillet, add brandy and simmer for 1 minute, scraping up browned bits.
- Add beef broth and simmer for 5 minutes until reduced by half.
- Lower heat and stir in cream and crushed peppercorns. Simmer for 1.5-2 minutes until thickened.
- Slice the steaks and plate, generously spooning sauce over. Garnish with extra peppercorns or herbs if desired.
