  • 1 tbsp baking powder
  • 1 cup milk at room temperature

  • 1 tbsp lemon zest
  • 1 cup fresh strawberries sliced
Buttercream Ingredients
  • 1 cup unsalted butter at room temperature
  • 4 cups powdered sugar
  • 2 tbsp milk to adjust consistency
  • 1 cup fresh strawberries mashed

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C) and grease the cake pans.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the flour, baking powder, lemon juice, and lemon zest.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  6. Fold in the sliced strawberries gently.
  7. Pour the batter into prepared pans and bake for 25-30 minutes.
  8. Let the cakes cool on a wire rack before frosting.
Buttercream Preparation
  1. Beat the butter until creamy, then gradually add the powdered sugar.
  2. Add the mashed strawberries and mix until smooth.
  3. If the buttercream is too thick, add milk to reach desired consistency.
Assembly
  1. Once the cakes are completely cool, frost between the layers and on the sides and top.
  2. Decorate with fresh strawberries and mint leaves for a stunning finish.
