- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan and prepare the cake mix as per package instructions.
- Allow the cake to cool completely in the pan for around 30 minutes, then crumble into fine crumbs.
- Mix in approximately ¾ cup of strawberry frosting until the mixture holds together like dough. Adjust with more frosting if needed.
- Portion out 1-2 tablespoon amounts into balls and place them on a parchment-lined baking sheet. Chill for at least 30 minutes.
- Melt the pink candy melts in a microwave-safe bowl, adding coconut oil if necessary for a smooth consistency.
- Dip each truffle into the melted pink coating and place them back onto the parchment-lined sheet.
- Before the coating sets, sprinkle with freeze-dried strawberries or sprinkles for decoration.
- Melt the white chocolate or candy melts and drizzle over the truffles after the pink coating has set.
