  • 1 teaspoon smoked paprika
  • ½ teaspoon allspice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

  • ¼ cup tamari or soy sauce
  • 1 tablespoon liquid smoke optional
  • 2 tablespoons maple syrup or brown sugar
For the Sandwich
  • 1 cup sliced tomatoes use in-season for best flavor
  • 1 ripe avocado mashed for creaminess
  • 1 tablespoon fresh dill can substitute with basil or cilantro
For Assembly
  • 2 ciabatta rolls or gluten-free bread for sandwich base
  • 1 cup lettuce butter or romaine work well

Method
 

Preparation Steps
  1. In a medium bowl, whisk together the tamari, maple syrup, apple cider vinegar, vegetable broth, oil, liquid smoke, nutritional yeast, smoked paprika, allspice, garlic powder, onion powder, and white pepper.
  2. Slice the tofu carefully into thin strips, approximately 1/8-inch thick.
  3. Arrange the tofu in a shallow dish and pour the marinade over, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes.
  4. Heat oil in a skillet and cook the marinated tofu slices until golden-brown, about 4-5 minutes per side.
  5. Mash the avocado with lime zest, lime juice, dill, and salt in a bowl until smooth.
  6. Assemble the sandwich by spreading avocado on ciabatta rolls, adding tomato slices, crispy tofu, and lettuce, then close and serve.
