  • 1 cup Breadcrumbs use gluten-free if needed
  • 2 large Eggs can substitute with flax egg for vegan
  • 1 tbsp Garlic Powder or fresh garlic reduced

For the Sauce
  • 1/2 cup Rice Vinegar apple cider vinegar works well
  • 1/2 cup Brown Sugar or honey/coconut sugar
  • 1 cup Chicken Broth low-sodium preferred
  • 1/2 cup Ketchup homemade or no-sugar-added
  • 2 tbsp Tomato Paste
  • 1/2 cup Pineapple Juice orange juice can substitute
  • 2 tbsp Cornstarch or arrowroot powder
For the Vegetables
  • 2 tbsp Vegetable Oil olive or coconut oil can be used
  • 1 Onion diced
  • 1 Bell Pepper any color works
  • 1 cup Pineapple Chunks canned or fresh

Method
 

Step‑by‑Step Instructions
  1. In a large bowl, combine ground beef, breadcrumbs, eggs, garlic powder, salt, and pepper. Mix until just combined; shape mixture into golf ball-sized meatballs.
  2. Preheat your air fryer to 380°F and cook the meatballs for 10 minutes, shaking halfway through. Oven method: bake at 400°F for 20-25 minutes until golden and cooked through.
  3. In a separate bowl, whisk together rice vinegar, brown sugar, chicken broth, ketchup, tomato paste, pineapple juice, and cornstarch until well blended.
  4. Heat vegetable oil in a large pan over medium-high heat. Add diced onions and bell peppers, sautéing for 1 minute. Add garlic and cook for an additional 30 seconds.
  5. Pour sauce into the vegetable mixture, stirring continuously. Let simmer for 2-3 minutes until thickened.
  6. Gently add cooked meatballs and pineapple chunks to the pan, tossing to coat. Heat everything together for 2 minutes.
  7. Serve over fluffy white rice or egg noodles, garnishing with green onions or sesame seeds.
