- Pat the chicken thighs dry and season with salt and pepper. Set aside.
- Heat vegetable oil in a large skillet over medium-high heat. Add chicken thighs, sear for 5-7 minutes until golden, flip and cook for another 5-7 minutes. Remove from skillet.
- Reduce heat to medium, add minced garlic to the skillet. Sauté for about 30 seconds until fragrant.
- Pour in honey, soy sauce, and apple cider vinegar. Stir and scrape brown bits, simmer to create a sticky sauce.
- Return chicken to the skillet, spoon sauce over. Simmer for 8-10 minutes until cooked through and sauce thickens.
- Remove from heat, rest for 2-3 minutes. Serve drizzled with sauce over rice or with roasted vegetables.
