  • 4 cups Sweet Potatoes, cubed or yams for similar flavor profile
  • 2 cups Black Beans, drained or kidney/pinto beans as alternatives
  • 1 cup Corn fresh, frozen, or canned
  • 1 each Red Bell Pepper, diced or green bell peppers
  • 1 each Red Onion, diced or yellow/white onions
  • 3 cloves Garlic, minced fresh preferred
For Flavoring
  • 1 teaspoon Cumin or adjust to taste
  • 1 teaspoon Paprika or adjust to taste
  • 1 teaspoon Chili Powder or adjust to taste
  • to taste Salt use sea salt for flavor
  • to taste Pepper
For the Topping
  • 2 cups Shredded Cheese Monterey Jack or Pepper Jack recommended
  • 1/4 cup Fresh Cilantro, chopped optional
For Cooking
  • 2 tablespoons Olive Oil can substitute with vegetable oil
  • 2 tablespoons Lime Juice or lemon juice
  • 1 cup Vegetable Broth homemade or store-bought

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Boil sweet potatoes in a large pot for about 10 minutes until tender. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat, sauté red onion and bell pepper for 5 minutes until soft. Add minced garlic and sauté for another minute.
  4. In a mixing bowl, combine cooked sweet potatoes, black beans, corn, and sautéed vegetables. Add spices, lime juice, salt, and pepper. Mix well.
  5. Layer half of the mixture in a greased 9x13-inch baking dish, top with half the cheese. Repeat with remaining mixture and cheese.
  6. Pour vegetable broth around the edges of the casserole, cover with foil, and bake for 30 minutes. Remove foil and bake for an additional 15 minutes.
  7. Let the casserole cool for a few minutes, garnish with cilantro if desired, and serve warm.
