Step-by-Step Instructions for Vegan Pineapple Fried Rice
  1. Prepare the Sauce: In a small bowl, whisk together tamari, maple syrup, garlic powder, hot sauce, and optional ground ginger. Set aside.
  2. Caramelize the Pineapple: Heat a cast iron skillet over medium-high heat. Add pineapple chunks, sauté for 3-5 minutes until golden. Remove from skillet.
  3. Cook the Vegetables: In the same skillet, add red bell pepper and red onion. Sauté for 3-4 minutes until softened. Remove and combine with pineapple.
  4. Stir-Fry the Cabbage and Garlic: Add purple cabbage and stir-fry for 2-3 minutes. Add minced garlic, cook for 30 seconds.
  5. Add Rice and Peas: Stir in brown rice and green peas, mix well. Pour in the sauce, cook for 2-3 minutes until heated through.
