  1. In a high-speed blender, combine Greek yogurt, fresh cilantro, lime juice, and a touch of salt. Blend until smooth and creamy, about 1-2 minutes.
  2. Bring salted water to a boil. Add 375g of pasta and cook until al dente, about 8-10 minutes. Drain and rinse with cold water.
  3. In a large bowl, combine cooled pasta, drained chickpeas, corn, diced cucumber, and red onion. Mix gently.
  4. Drizzle the creamy dressing over the salad mixture and toss gently to coat.
  5. Sprinkle crumbled cheese over the top and fold it in gently.
