  • ½ cup dressing (mayo or Greek yogurt) dairy-free mayo is a vegan swap
  • 1 fresh lime juice juice from one lime

  • ½ teaspoon cumin

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine ½ cup of mayo or Greek yogurt with the juice of one fresh lime, 1 teaspoon of chili powder, ½ teaspoon of garlic powder, ½ teaspoon of cumin, ½ teaspoon of paprika, and a pinch of salt. Use a whisk to mix until the dressing is smooth and well blended. Set it aside.
  2. In a large mixing bowl, add 2 cups of cooked shredded chicken, 1 can of rinsed and drained black beans, 1 cup of corn, and ½ cup of diced fresh jalapeños. Toss in 1 cup of quartered cherry tomatoes, ¼ cup of finely chopped red onion, and ⅓ cup of pepitas.
  3. Drizzle the prepared dressing over the salad ingredients. Using a spatula or spoon, gently toss everything together until well coated.
  4. Serve immediately or transfer into an airtight container and refrigerate for meal prep.
