Lemon Posset Ingredients

For the Creamy Base
• Heavy Cream – Provides the rich, creamy texture; use full-fat cream (30% or more fat) for the best Lemon Posset results.
• Granulated Sugar – Adds sweetness to balance the tangy lemon; feel free to substitute with castor sugar for a finer texture.

For the Zesty Flavor
• Fresh Lemons – The star ingredient; be sure to use juice, zest, and peel for an authentic taste, avoiding bottled lemon juice to truly elevate your Lemon Posset.

Step‑by‑Step Instructions for Lemon Posset

Step 1: Prepare the Lemons
Start by washing and drying your fresh lemons thoroughly. Using a microplane or fine grater, zest the outer peel of the lemons and set it aside. Next, carefully cut each lemon in half and scoop out the pulp into a bowl, discarding any seeds you find. This step ensures you have the perfect zesty foundation for your delightful Lemon Posset.

Step 2: Extract the Juice
To maximize the freshness of your Lemon Posset, extract the juice from the lemon pulp. Place a fine strainer over a bowl and press the pulp through to separate the juice. Aim to reserve about three tablespoons of juice, keeping an eye on the consistency to ensure a silky texture. This vital step infuses your posset with vibrant lemon flavor.

Step 3: Heat the Cream and Sugar
In a small saucepan, add one cup of heavy cream along with four tablespoons of granulated sugar. Heat the mixture over medium heat, stirring gently to dissolve the sugar without letting it boil. Keep an eye on the cream as you heat it—you’re looking for small bubbles to form around the edges, indicating it’s ready for the next step in crafting your smooth Lemon Posset.

Step 4: Combine Lemon Juice and Zest
Once the cream is heated and the sugar is dissolved, remove the saucepan from the heat. Gradually mix in the reserved lemon juice and zest, stirring continuously to prevent curdling. The mixture should become beautifully creamy and fragrant, with a lovely balance of tangy and sweet that defines your Lemon Posset.

Step 5: Strain for Smoothness
To ensure a flawless texture in your Lemon Posset, pour the mixture through a fine sieve into another bowl. This will remove any lumps or bubbles, resulting in a silky cream that will set beautifully. The shimmering liquid you see will be your foundation for the velvety dessert ahead.

Step 6: Spoon into Skins or Ramekins
Now it’s time to spoon your luscious Lemon Posset into the reserved lemon halves or small ramekins. Fill them generously, but leave a little space at the top for expansion during chilling. This whimsical presentation not only enhances flavor but adds a delightful visual touch when serving to guests.

Step 7: Chill to Set
Place the filled lemon skins or ramekins in the refrigerator and let them chill for 2-3 hours. This is crucial for your Lemon Posset to set properly, resulting in a creamy, velvety consistency similar to a light custard. The time spent chilling will enhance the flavor, so be patient as the magic happens!

Step 8: Garnish and Serve
Once the Lemon Posset has set, take it out of the refrigerator. You can garnish it creatively with fresh lemon slices, a sprig of mint, or a handful of berries for a pop of color. These finishing touches will elevate your dessert visually and add an extra layer of flavor, making your Lemon Posset even more irresistible!

How to Store and Freeze Lemon Posset

Fridge: Keep any leftover Lemon Posset in a sealed container for up to 2 days. This will help maintain its creamy texture and fresh flavor.

Freezer: Avoid freezing Lemon Posset, as the texture may become grainy and lose its smoothness upon thawing.

Reheating: Unlike baked desserts, Lemon Posset is best served chilled. Simply remove it from the fridge and garnish before enjoying any leftovers.

Covering: Make sure to cover the posset well, as it can absorb odors from the fridge, affecting its delightful lemon taste.

Lemon Posset Recipe FAQs

What lemons should I use for the Lemon Posset?
Absolutely! Always opt for fresh lemons over bottled lemon juice for the best flavor in your Lemon Posset. Look for firm, bright yellow lemons with a fragrant scent. Avoid lemons with dark spots all over, as that indicates overripeness, which can affect the flavor of your dessert.

How should I store leftover Lemon Posset?
You can keep any leftover Lemon Posset in a sealed container in the refrigerator for up to 2 days. This will help maintain its creamy texture and fresh lemon flavor. Make sure to store it away from strong-smelling foods, as it can absorb odors, which may impact its delightful zesty taste.

Can I freeze Lemon Posset?
Unfortunately, it’s best to avoid freezing Lemon Posset, as the texture may become grainy and lose its smoothness upon thawing. If you have to make further batches, store them in your fridge and enjoy every last spoonful in the short time it lasts!

What if my Lemon Posset doesn’t set?
If your Lemon Posset isn’t setting properly, there might be a couple of factors at play. First, ensure you’ve used full-fat heavy cream (30% or more fat) for the best results. If it’s not thickening, try chilling it for an additional hour or two, as it may need more time to firm up. Always remember to mix the lemon juice into the cream promptly after taking it off the heat; delay can lead to curdling.

Are there any dietary considerations I need to be aware of?
Great question! This Lemon Posset recipe is naturally gluten-free and eggless, making it suitable for various dietary preferences. However, if you’re serving it to guests, be sure to check for any lemon allergies. You can also adjust sugar levels based on individual preferences or substitute with a sweetener that fits your dietary needs!
