- Rinse the strawberries, onion, and jalapenos under cold water. Puree in a food processor until smooth.
- In a large pot, combine the pureed mixture with sugar, vinegar, bourbon, salt, and pepper. Stir thoroughly.
- Bring the mixture to a slight boil over medium-high heat, then reduce to medium-low and simmer for at least 30 minutes.
- Sterilize canning jars and lids in boiling water for 10 minutes.
- Ladle hot sauce into jars, leaving 1/4 inch of headspace.
- Wipe jar rims with a clean cloth, place lids on top, and screw metal bands until fingertip-tight.
- Process jars in boiling water bath for 15 minutes.
- Cool jars undisturbed for 24 hours.
